I was meaning to work that out (lab it), but never got around to it.
A Flax farm will supply six tunic shops which will supply more than 32 houses.
A olive farm will do the same but just barely.
Do you need more?

Oh no. Goat farms with 3 or 4 butchers will feed about 8 to 10 thousand (80 to 100 houses) and the fishing jetty will feed about 12,000. This will depend on the map and how your cities are laid out.

When I played Tom's Greektrader scenario I could feed and give meat to the entire city of 22000 people. Everyone with a home and everyone having meat to evolve them to small huts with just 2 goat farms and 6 butchers. I would never have believed it.
Really you should keep homes out of range of butchers and fishmongers (as well as farms and quays) because they take more from a butcher than they do from a granary, but in practice you may not want to for reasons of layout or distribution
Here is what I posted on another thread, but updated by Tom's post following it
Goat farm produces up to 4 goats and then stops work until some is removed. A butcher kills a goat and hangs 2 halves on a rack. The first half produces 8 joints which he puts on the table. The second half and all subsequent halves produce 16 joints which go to the granary. After Animal husbandry is researched this increases from 16 to 24. So one joint in a butcher would provide 3 joints in a granary. Therefore not only keep homes out of range of farms but also out of range of butchers if possible.
A Fishing Jetty will produce up to 9 Fish and then stops work until some is removed. A fishmonger will remove up to 2 Fish. The first fish produces 8 fillets which he puts on the table. The second fish produces 32 fillets which go in the granary. Subsequent fish will also produce 32 fillets for the granary.

The other day while playing CCR I noticed that for some reason my houses were all lacking in olive oil, I have noticed this quite a lot but never really bothered about it (just added more olive farms) but this still didn't have any impact.
My happiness is 100% and every worker is housed and in range with all the shops.
I wonder if anybody has had the same problem and could somebody possibly shed some light on this and maybe a come up with a solution.

Exclude Olives and Grapes from rations by unticking the box on the granary controls. This will stop them disappearing. These controls are buggy, so if you can't do it, save the game quit the game entirely and then go in again. This will free up the controls. I generally have to do this once per city.
Secondly, don't evolve all your homes too high. I normally just give most of the workers meat or fish and water from a cistern. They will still earn you tax. I only evolve a few homes beyond this stage, just enough to fulfil scenario requirements.
The ratio of Olive farm to Oil press will vary with distance and how you lay things out and what researches have been done. Probably 4-6 per farm. If Olives mount up in a granary add another press

Unless you absolutely have too, Lock olives out of granary. if you have too then follow the above post and check olives in granary window. Also make sure shops have access to new farms (within their radius). A granary close to shops dedicated to olives will work also if farms are distant.
